Green Chile (Left Overs) Frittata

This seems like a great way to use up left overs

Servings: 4

1 10 eggs, Beaten
1 cup evaporated skim milk
1 cup shredded, reduced-fat Cheddar cheese
1 4-ounce can chopped green chiles, drained
1/2 cup sliced scallions
1/2 teaspoon ground cumin
1/2 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
4 cups Spaghetti, Left over
2 cups pork roast, Shredded, Left over
Vegetable oil cooking spray
Salsa for topping

Preheat oven to 400 degrees F (200 degrees C).

Lightly grease a 9×13 inch baking dish.

Combine first 9 ingredients in a large bowl; set aside.

Gather leftovers (Spaghetti, Roast) and stir into mixture

Pour into the prepared baking dish.

Bake 15 minutes in the preheated oven. Reduce heat to 325 degrees F (165 degrees C), and continue baking for 35 minutes.

Cool slightly, and serve.
