I don’t know why but healthy side dishes are always hard to come up with. This one is a great one that pairs with many Asian inspired dishes. Who would have ever believed Walnuts would be so good in an Asian dish.
Serves 4:
1/2 cup water
2 tablespoons soy sauce
2 teaspoons cornstarch
dash of crushed red pepper
2 medium carrot
1 1/3 tablespoons water
6 ounces frozen pea pods
1/4 cup broken walnuts
2 teaspoons butter
Medium carrot should be thinly sliced on a diagonal cut (bias).
In a custard cup stir together 1/4 cup water, soy sauce, cornstarch, and crushed red pepper.
Microwave cook, uncovered, on 100% power for 1 to 1 1/2 minutes or till thickened and
bubbly, stirring every 30 seconds.
Place the carrot in a 20-ounce casserole. Sprinkle with 2 teaspoons water. Microwave cook, covered, on 100% power for 2 1/2 minutes.
Drain.
Toss together carrot, pea pods, and walnuts; add butter.
Microwave cook, covered, on 100% power about 1 1/2 minutes or till the vegetables are crisp-tender.
Toss with the soy sauce mixture.
